225g ground almonds

100g icing sugar

5ml lemon juice

100g castor sugar

1 egg

2ml vanilla essence
Methods

Sieve ground almonds, icing sugar and caster sugar separately.

Whisk the sieved icing sugar and caster sugar together with egg white over hot water until the mixture is lightly, thick and white.

Stir in the ground almonds, lemon juice and vanilla essence.

Knead until the mixture becomes smooth.

Use it as required or store it temporarily in a plastic bag to prevent drying.
