250g wheat flour

150g yeast

1 level teaspoon salt

1 level teaspoon sugar

60g butter or margarine

Water or milk
Methods

Sieve the flour and salt into a large bowl.

Rub the flour with butter until well mixed.

Make a well in the centre.

Cream the yeast with sugar, add some water and pour into the flour.

Add warm water or milk and beat well. Knead thoroughly to form a smooth, non-sticky dough.

Cover with a damp cloth and leave in a warm place.

When doubled in size, knock it down and knead lightly.

Shape into small rounds and place on a greased baking tin.

Prove for 20 minutes.

Brush with milk or beaten egg.

Bake in a hot oven for 15 minutes, then lower the temperature and bake for another 20 minutes.
