Ingredients (Serve 4 people)

250g beans

2g salt

500ml cooking oil

30g breadcrumbs

1 carrot
-
4 cloves of garlic

2 eggs

Carriander leaves

1 onion

Water

3 leaves of lettuce
Methods

Sort, wash and boil the beans until soft and only a little water is left.

Chop the onion.

Drain the water completely and mash the beans into a smooth paste.

Add beaten egg yolks, curry powder, salt and onion.

Mix to obtain stiff consistency and shape the mixture into croquettes of bean shape.

Deep them into the egg white. Then, roll them into breadcrumbs.

Fry them in hot oil until brown.

Serve them on a bed of salad and garnish with sliced boiled carrots or any suitable garnish.
