Ingredients

  • ½ chicken

  • 2 tsp grated coconut

  • 2 small onions (sliced)

  • 2 cloves of garlic

  • 1 piece of ginger

  • ¼ tsp curry powder

  • 1 dessertspoon chilli powder or chilli paste

  • 2 tsp cooking oil or 1 tablespoon butter

  • Salt to taste

  • 1 lemon or lime

Methods

  • Wash chicken pieces and mix well with the ground ingredients.

  • Add ½ teacup of water to the coconut and squeeze to obtain thick milk. Place in one container.

  • Add 1½ teacups of water to the coconut again and squeeze to obtain a fairly thin milk. Place in another container.

  • Heat oil or butter and fry sliced onion until golden brown.

  • Add the chicken pieces, chilli powder or paste and fry for 2 minutes.

  • Add the second coconut milk and bring to the boil. Lower the flame and simmer gently.

  • When the chicken is half-cooked, add the thick milk and continue to simmer.

  • When the chicken is cooked and the gravy is thick, add salt to taste and the juice of half a lime.
