Ingredients

½ chicken

2 tsp grated coconut

2 small onions (sliced)

2 cloves of garlic

1 piece of ginger

¼ tsp curry powder

1 dessertspoon chilli powder or chilli paste

2 tsp cooking oil or 1 tablespoon butter

Salt to taste

1 lemon or lime
Methods

Wash chicken pieces and mix well with the ground ingredients.

Add ½ teacup of water to the coconut and squeeze to obtain thick milk. Place in one container.

Add 1½ teacups of water to the coconut again and squeeze to obtain a fairly thin milk. Place in another container.

Heat oil or butter and fry sliced onion until golden brown.

Add the chicken pieces, chilli powder or paste and fry for 2 minutes.

Add the second coconut milk and bring to the boil. Lower the flame and simmer gently.

When the chicken is half-cooked, add the thick milk and continue to simmer.

When the chicken is cooked and the gravy is thick, add salt to taste and the juice of half a lime.
