Ingredients

  • 228g castor sugar

  • 1 egg

  • 2ml vanilla essence

  • Food colour

  • 170g ground almonds

  • 2ml glucose

  • 5ml lemon juice

  • 71ml water

 

Methods

  • Sieve castor sugar into a pan containing water

  • When the sugar is dissolved, add glucose. Then boil it to 114°C

  • Add sieved ground almonds and unbeaten egg white to the mixture and then stir it.

  • Cook the mixture for 2-3 minutes over gentle heat

  • Add flavourings and food colour. Then mix them well and allow the mixture to cool.

  • Knead until the mixture is smooth.

  • Mould according to the shape required for decoration.
