Methods

Sieve castor sugar into a pan containing water

When the sugar is dissolved, add glucose. Then boil it to 114°C
-
Add sieved ground almonds and unbeaten egg white to the mixture and then stir it.

Cook the mixture for 2-3 minutes over gentle heat

Add flavourings and food colour. Then mix them well and allow the mixture to cool.

Knead until the mixture is smooth.

Mould according to the shape required for decoration.
