Ingredients

3 oz rice

4 cups water

A few drops of lemon juice

1 rounded teaspoon salt
Methods

Bring the water to the boil.

Add the lemon juice, salt and the cleaned, washed rice.

When the rice is almost done, strain off the water and pour some cold water over the rice. Strain again.

Return the rice to the pan and dry it over the heat.

Serve hot, piled lightly on a shallow dish, and sprinkle some chopped parsley over it.
