Ingredients

1 oz butter

2 oz icing sugar

1 oz chopped roasted peanuts

1 oz sugar

1 egg yolk
Methods

Sieve the flour into a bowl and rub in the fat.

Add sugar and chopped peanuts and mix well.

Add the egg yolk and milk to form a soft dough.

Roll out to ½ inch thickness.

Cut into rounds using a fluted cutter.

Prick with a fork and place on a greased baking tray.

Bake in a moderate oven for 15–20 minutes.

NOTE: Coconut biscuits may be made the same way, substituting 1 oz desiccated coconut for the peanuts.
