Ingredients

2 oz flour

4g baking powder

2g salt

50g icing sugar

2 eggs

150ml milk or water

6 ripe bananas

500ml cooking oil
Methods

Make a thick batter from flour, eggs, milk, salt and baking powder.

Peel each banana and cut in half lengthwise.

Coat the cut bananas with batter.

Heat the oil until fairly hot. Add the coated bananas and fry until golden brown.

Drain to remove excess oil.

Serve on a plate and dredge with icing sugar.
