Ingredients

4 oz butter

3 oz castor sugar

1 medium-sized egg

6 oz plain flour

Flavourings: vanilla, almond essence, grated lemon

Glacé cherries, citron peel or pineapple for decoration
Methods

Cream butter and sugar until light and fluffy.

Beat in the egg gradually.

Add the flavouring and fold in the sifted flour.

Place the mixture in a large forcing bag with a large star nozzle.

Pipe onto a greased baking tray. Alternatively, roll with floured hands into small balls and flatten.

Place a piece of glacé cherry, pineapple or citron peel on each centre.

Bake in a slow oven for 10–15 minutes to a pale biscuit colour. Makes 30–36 biscuits.
