Ingredients

4 oz grated cheese

1½ oz butter

1 oz salt

¼ tsp lemon essence

½ oz sugar

2 oz flour

2 oz milk

1 egg (beaten)

6 oz custard or flaky pastry
Methods

Roll out the pastry to ¼ inch thickness and cut into rounds using a large cutter.

Line patty tins with the rounds of pastry.

Cream butter and sugar until light and fluffy.

Gradually add the beaten egg.

Fold in flour, grated cheese and salt.

Add lemon essence and place a dessert spoonful of the mixture in each pastry case.

Place two strips of pastry in a cross shape on top.

Bake in a moderate oven at 350°F until golden.
