½ oz butter

1 tsp grated cheese

Whisk the eggs until thick and white.

Add pepper and salt and continue to whisk for another minute.

Melt the butter in a frying pan.

Pour in the whisked eggs and tilt the pan to spread evenly.

When golden brown on the underside, sprinkle the cheese over the creamy side.

Slip a palette knife under the omelette, fold over into two and slide onto a warmed plate. Serve immediately.
