50–60g grated cheese

75ml milk

Round fried bread

Chopped parsley

Cayenne pepper, salt

A few breadcrumbs

1 egg
Methods

Melt the butter in a saucepan. Add the milk, beaten egg and breadcrumbs.

Stir over gentle heat until it begins to thicken, then add grated cheese, salt and pepper.

Pile high on small bread croutons fried in butter.

Garnish with chopped parsley and arrange on a hot dish with a paper doily.

Garnish with sprays of parsley.
