Ingredients

4 oz flour

2 oz sugar

2 oz butter

½ oz cocoa

1 egg yolk

Milk
Methods

Sieve flour and cocoa into a bowl.

Rub in butter.

Add the sugar and mix well.

Add the egg yolk and milk to the mix to a soft dough.

Roll out thinly and cut into rounds using a small fluted cutter. Prick with a fork.

Bake in a moderate oven for 20–25 minutes.

When cold, sandwich together with almond cream.
