Ingredients

250g flour

Pinch of salt

75g butter

1 tablespoon sugar

30g of yeast
Methods

Sieve flour and salt into a bowl. Cream the yeast with the sugar.

Melt the butter. Add the milk, warm it and add it to the creamed yeast. Pour into the flour with the egg.

Beat well for 5 minutes. Cover with a damp cloth and leave to rise in a warm place.

When well risen, knead lightly. Roll out the dough and cut with a doughnut cutter. Leave to prove for 20 minutes.

Fry in deep hot fat to a golden brown colour and toss in castor sugar mixed with cinnamon.
