Ingredients

1 hard-boiled egg

1¼ oz butter

Pepper

1 tomato (sliced)

6 slices of bread
Methods

Lightly butter the slices of bread.

Sieve the hard-boiled egg and place it on a board.

Add ¾ oz butter and ¼ teaspoon pepper and mix to a smooth paste.

Spread the egg mixture on three slices of bread.

Place slices of tomato over the egg filling.

Cover each slice with the buttered bread slices, press firmly and trim off the crusts.

Cut into triangular shapes and arrange neatly on a plate. Cover with a damp muslin cloth.

Garnish with parsley before serving.

NOTE: ½ teaspoon chilli sauce may be added to the egg mixture for variety and flavour.
