2 eggs

3 oz sugar

3 oz flour

3 oz butter (melted and clarified)
Methods

Sieve half the flour into the whisked mixture and fold lightly with a metal spoon.

Sift the remaining flour and add the clarified butter along the sides of the bowl.

Fold quickly and lightly, then pour the mixture into a greased sandwich tin.

Bake in a moderate oven until golden brown and set.

NOTE: After adding the melted fat, the sponge must be mixed very lightly or the fat will sink and make the cake heavy.
