  • Sieve the icing sugar.

  • Gradually add water and flavourings, then stir well to form a smooth icing of the required consistency. Do not add too much water as it is absorbed very rapidly by the cake and produces icing that is too thin.

  • Divide the mixture into two portions. To one portion, add colours drop by drop until you obtain the required colour.

  • Pour the second white portion over the cake to cover the whole cake evenly.

  • Pour the coloured portion over the cake to make it flow down the sides.
