250g icing sugar

Sieve the icing sugar.

Gradually add water and flavourings, then stir well to form a smooth icing of the required consistency. Do not add too much water as it is absorbed very rapidly by the cake and produces icing that is too thin.

Divide the mixture into two portions. To one portion, add colours drop by drop until you obtain the required colour.

Pour the second white portion over the cake to cover the whole cake evenly.

Pour the coloured portion over the cake to make it flow down the sides.
