Ingredients

  • 4 oz puff pastry

  • White of egg

  • Any desired jam

  • Castor sugar

Methods

  • Roll out the pastry thinly and cut into large rounds the size of a side plate.

  • Place a dessertspoon of jam in the centre of each round.

  • Dampen the edge, fold one third of the pastry to the centre, then fold the remaining edge over.

  • Place puffs on a baking tray with folded ends face down. Return to the oven for a few minutes.

  • NOTE: Fresh fruit like chopped pineapple or apple can be mixed with sugar as a filling.
