4 oz puff pastry

White of egg

Any desired jam

Castor sugar
Methods

Roll out the pastry thinly and cut into large rounds the size of a side plate.

Place a dessertspoon of jam in the centre of each round.

Dampen the edge, fold one third of the pastry to the centre, then fold the remaining edge over.

Place puffs on a baking tray with folded ends face down. Return to the oven for a few minutes.

NOTE: Fresh fruit like chopped pineapple or apple can be mixed with sugar as a filling.
