Ingredients

250g dehulled maize

150g beans

1 tomato

100ml cooking oil

1 carrot
-
1 green pepper
-
1 onion
-
2g salt
-
Water

5g curry powder or turmeric (optional)

250ml coconut milk or 100g ground groundnuts (optional)
Methods

Wash the maize and bring to the boil until almost tender. Add washed beans and continue boiling until fully cooked and soft.

Peel and slice the onions and carrots.

Heat the cooking oil and fry the onion until light brown. Add carrot, salt and spices.

Add the bean and maize mixture and stir well. Leave to boil for a while.

Add coconut milk or ground groundnuts while stirring occasionally. Simmer until the liquid is nearly dry but leaves enough stew.

Serve on a plate and garnish with sliced tomato and green pepper or any suitable garnish.
