How to Make Kedgeree at Home Step by Step Recipe

Ingredients

  • ¾ lb flaked fish

  • 2½ oz rice

  • 1 egg

  • 2 hard-boiled eggs

Methods

  • Wash the rice in cold water.

  • Boil until quite tender, then drain and allow cold water to run through it. Drain well.

  • Chop the egg.

  • Flake the fish and mix with the chopped egg, boiled rice and seasoning.

  • Bind the mixture with beaten egg.

  • Reheat in a double saucepan.

  • Pile on a dish and decorate with egg white rings and sieved egg yolk on top.

  • Serve hot or cold.
