Ingredients

¾ lb flaked fish

2½ oz rice

1 egg

2 hard-boiled eggs
Methods

Wash the rice in cold water.

Boil until quite tender, then drain and allow cold water to run through it. Drain well.

Chop the egg.

Flake the fish and mix with the chopped egg, boiled rice and seasoning.

Bind the mixture with beaten egg.

Reheat in a double saucepan.

Pile on a dish and decorate with egg white rings and sieved egg yolk on top.

Serve hot or cold.
