Ingredients

3 small soft cooking bananas (such as kigome or vitoke)

A little lemon juice if desired

½ pt (¼ lt) thick sour milk or yoghurt

A pinch of salt
Methods

Peel bananas and split them lengthwise. Remove the inner pith, then cut across twice.

Wash the pieces and put to boil. Add salt.

When tender, drain the water and mash bananas thoroughly while still hot.

Stir in milk a little at a time until all has been added.

Whisk until smooth. Add lemon juice if desired.

Serve cold for children and the elderly.
