Ingredients

  • 250g liver

  • 1 egg

  • 100g wheat flour

  • 100ml milk

  • 250ml cooking oil

  • 5g salt

  • 2g pepper (optional)

  • 3 leaves of lettuce

  • 1 carrot

Methods

  • Remove the thin layer from the top of the liver.

  • Cut the liver into even pieces. Season with 4g of salt and pepper.

  • Cook the liver until tender.

  • Prepare batter by sieving the flour into a bowl and making a hole at the centre. Add beaten egg, 1g of salt and milk. Stir from the centre until all the flour is incorporated and the mixture is smooth.

  • Dust the pieces of liver with wheat flour.

  • Coat the liver pieces with batter.

  • Deep fry until golden brown.

  • Serve on a bed of salad and garnish with boiled carrot pieces or any suitable garnish.
