250g liver

1 egg

100g wheat flour

100ml milk

250ml cooking oil

5g salt

2g pepper (optional)

3 leaves of lettuce

1 carrot
Methods

Remove the thin layer from the top of the liver.

Cut the liver into even pieces. Season with 4g of salt and pepper.

Cook the liver until tender.

Prepare batter by sieving the flour into a bowl and making a hole at the centre. Add beaten egg, 1g of salt and milk. Stir from the centre until all the flour is incorporated and the mixture is smooth.

Dust the pieces of liver with wheat flour.

Coat the liver pieces with batter.

Deep fry until golden brown.

Serve on a bed of salad and garnish with boiled carrot pieces or any suitable garnish.
