Ingredients

  • 8 oz flour

  • 2 rounded teaspoons baking powder

  • 2 oz sugar

  • 2 pinches of salt

  • 2 eggs

  • Water

  • 2 tsp cocoa (if desired)

Methods

  • Sieve the flour and baking powder together into a mixing basin.

  • Add the sugar.

  • Beat the eggs well and add ¼ cup of water.

  • Add the egg mixture to the flour and mix into a soft dough. Add more water if necessary. Knead until smooth and the dough leaves the sides of the bowl clean.

  • Cover with a towel and leave to rise for about ½ an hour in a warm place.

  • When risen, roll out on a floured surface to ½ inch thickness.

  • Cut into squares or triangles.

  • Fry in deep oil until golden brown.

  • Drain on kitchen paper or brown paper to remove excess fat.
