Ingredients

8 oz flour

2 rounded teaspoons baking powder

2 oz sugar

2 pinches of salt

2 eggs

Water

2 tsp cocoa (if desired)
Methods

Sieve the flour and baking powder together into a mixing basin.

Add the sugar.

Beat the eggs well and add ¼ cup of water.

Add the egg mixture to the flour and mix into a soft dough. Add more water if necessary. Knead until smooth and the dough leaves the sides of the bowl clean.

Cover with a towel and leave to rise for about ½ an hour in a warm place.

When risen, roll out on a floured surface to ½ inch thickness.

Cut into squares or triangles.

Fry in deep oil until golden brown.

Drain on kitchen paper or brown paper to remove excess fat.
