Ingredients

50g macaroni

50g cheese

3 shakes of pepper

Cheese sauce

15g salt

½ teaspoon mustard

Plain flour

250ml milk
Methods

Boil the macaroni in two pints of water until tender, about 10 minutes.

Grate the cheese. Drain the cooked macaroni and place it in an ovenproof dish.

Melt the margarine in a pan, add the flour and stir for about 3 minutes using a wooden spoon. Do not allow the flour to brown.

Remove from heat and gradually add the milk, stirring constantly.

Return the pan to the heat and continue cooking until the sauce thickens. Season well and add the grated cheese.

Mix the cheese sauce with the macaroni in the dish.

Sprinkle the remaining grated cheese on top.
