Ingredients

  • 125g butter

  • 2 eggs

  • Red jam

  • 125g sugar

  • 200g flour

  • 50g desiccated coconut

  • Glacé cherries

Methods

  • Cream butter and sugar until light and fluffy.

  • Add beaten egg gradually with a teaspoonful of flour each time, continuing to cream.

  • Fold in the remaining flour.

  • Bake in a moderate oven for 20 minutes.

  • When cooked, brush each one with melted jam.

  • Roll them in desiccated coconut.

  • Arrange on a plate and dip a cherry (cut in half) in jam and place on top of each madeleine.

  • NOTE: Madeleines may be rolled in finely chopped nuts and topped with butter cream.
