Ingredients

125g butter

2 eggs

Red jam

125g sugar

200g flour

50g desiccated coconut

Glacé cherries
Methods

Cream butter and sugar until light and fluffy.

Add beaten egg gradually with a teaspoonful of flour each time, continuing to cream.

Fold in the remaining flour.

Bake in a moderate oven for 20 minutes.

When cooked, brush each one with melted jam.

Roll them in desiccated coconut.

Arrange on a plate and dip a cherry (cut in half) in jam and place on top of each madeleine.

NOTE: Madeleines may be rolled in finely chopped nuts and topped with butter cream.
