1 apple

1 carrot

1 beetroot

1 lemon passion
Methods

Wash all fruit.

Boil the water.

Peel the lemon rind very thinly into a bowl.

Add sugar.

Pour boiling water over the sugar and rind. Leave to cool to extract colour and flavour and make a syrup.

Peel and cut the apple, carrot and beetroot into small pieces.

Blend the fruit with the syrup.

Strain the juice.

Squeeze the juice from the lemon and add it to the mixture.

Chill and serve in a jug.
