2 oz mushrooms (chopped)

½ pint white sauce

Prepare white sauce according to the thickness required.

When the sauce thickens, add the chopped mushrooms.

Cook for 2 minutes.

Serve with any meat or fish dish.

NOTE: Parsley sauce substitute a dessertspoon of finely chopped parsley for mushrooms. Egg sauce: substitute one finely chopped hard-boiled egg. Onion sauce substitute 2 boiled and chopped onions; use onion stock for making the sauce. Cheese sauce substitute 2 oz grated cheese for mushrooms.
