125g flour

½ teaspoon salt

250ml milk

1 egg
Methods

Sieve flour and salt into a large mixing bowl.

Make a well in the centre.

Break the egg into a saucer to check if it is fresh and drop it into the centre of the flour.

Add a little milk and stir with a wooden spoon, gradually drawing in the flour from the sides.

Add more milk if the mixture becomes stiff. When all the flour has been mixed with the egg and milk, beat vigorously for a few minutes.

Use batter as required.
