Ingredients

125g wheat flour

180ml milk

1 egg

2g salt

150ml cooking oil

1 tomato
-
3 leaves of lettuce
Methods

Sieve the flour into a large mixing bowl and add salt. Mix well.

Make a well at the centre of the flour.

Add beaten eggs into the well.

Add a small amount of water or milk and stir, drawing flour from the sides of the bowl.

If the mixture becomes thick, slowly add more water or milk. Beat vigorously until smooth and of pouring consistency.

Leave the batter to rest for a while.

Add a little oil to the frying pan and heat until hot.

Pour sufficient batter into the frying pan and swish it around to cover the whole base. Cook until the underside is brown, controlling the heat to prevent burning.

Turn over and cook the other side until brown. Repeat until all the batter is used.

Serve on a bed of salad and garnish with tomato slices or any suitable garnish.
