Ingredients

4 oz plain flour

2 oz margarine or butter

1 oz chopped roasted peanuts

1 oz sugar

1 egg yolk
Methods

Sieve flour into a bowl and rub in the fat.

Add sugar and chopped peanuts and mix well.

Add the egg yolk and a little milk and mix to a soft dough.

Roll out to â…› inch thickness.

Cut into rounds using a small fluted cutter.

Prick with a fork and place on a greased baking tray.

Bake in a moderate oven for 15–20 minutes until set.

NOTE: Coconut biscuits may be made the same way by substituting 1 oz desiccated coconut for the peanuts.
