Ingredients

½ kg boiled prawn, fish or crab meat

10 small onions, finely chopped

2 potatoes (boiled and mashed)

2 red chillies

1 egg for binding

Oil for frying

Salt to taste

Egg and breadcrumbs for coating
Methods

Pound the boiled prawn, fish or crab meat, or mince them.

Add mashed potatoes, onions, chillies, one beaten egg and salt. Mix well.

Divide into equal portions and shape each into oval cutlets.

Dip in beaten egg and toss in breadcrumbs.

Fry in hot deep fat to a golden brown colour.

Arrange neatly on the serving dish, garnished with parsley.
