Ingredients

2 cups rice flour

1 rounded teaspoon baking powder

½ cup sugar

½ level teaspoon ground cinnamon

½ cup coconut milk or water

½ pt groundnut oil
Methods

Add the cinnamon and baking powder to the flour and sift into a mixing basin.

Add the sugar.

Warm some water and coconut milk.

Add the liquid a little at a time and stir until the mixture is like a thick batter.

Continue stirring for a few minutes until the batter produces air bubbles.

Leave covered overnight.

The following morning, the batter will have risen and become thicker.

Heat the oil in a deep pan until fairly hot but not smoking.

Add the mixture in tablespoonfuls.

Fry until golden brown.

When ready, put on brown or kitchen paper to drain off excess fat.

Serve hot.
