Ingredients

250g plain flour

125g sugar

120g margarine

3 oz currants (washed)

2 eggs

Milk
Methods

Sieve flour, mixed spice and salt into a bowl.

Rub in the margarine and add the sugar, currants and candied peel. Mix well.

Add beaten egg and milk to bind the mixture together.

Place a dessertspoonful of the mixture at a time in rocky heaps on a greased baking tray, using a fork to get the rough effect.

Bake in a hot oven for 20 minutes.
