500g icing sugar

3 eggs

20ml lemon juice

Sieve the icing sugar into a mixing bowl.

Separate the egg white from the egg yolk.

Beat the egg white until foamy.

Add the egg white to the icing sugar and stir well to produce a heavy icing mixture.

Add lemon juice and stir well.

Divide the mixture into two portions. To one portion, continue adding egg white slowly while stirring to produce a soft white icing mixture that can coat the back of a spoon.

Apply this mixture over the cake using a palette knife to cover it until it has a smooth surface.

To the other portion, add food colour, mix well, and fill the mixture into a piping bag. Pipe it onto the cake for an attractive decoration.
