Ingredients

3 oz rice

1½ cups water

1 teaspoon ghee

Salt and pepper

Vegetable or meat extract
Methods

Clean and wash the rice.

Heat fat in a saucepan.

Add the rice and stir until it looks transparent.

Add the measured water, pepper, salt and extract.

Bring to the boil quickly, then lower the heat and cook gently until the water has dried up and the rice is done, about 15–20 minutes.

NOTE: Place the lid only halfway across the saucepan so that some steam can escape, otherwise the rice will remain wet.

Pile the rice high on a shallow dish and serve hot, garnished with finely chopped parsley.
