Ingredients

2 hard-boiled eggs

¼ lb sausage meat

½ to 1 oz flour

Beaten egg

Breadcrumbs
Methods

Shell the eggs and roll lightly in flour.

Divide the sausage meat into two portions and wrap each egg in one portion.

Make sure there are no cracks and that the egg is covered evenly.

Brush over with beaten egg and roll in breadcrumbs evenly.

Fry in deep oil until golden brown in colour.

Cut each egg in half lengthwise and arrange on a bed of lettuce. Serve while hot.
