Ingredients

1½ oz butter

1½ oz sugar

5 oz flour

1 egg yolk

Grated rind of ½ lemon

1 teaspoon water
Methods

Cream the butter and sugar until soft and fluffy.

Add the egg yolk and grated lemon rind and beat well.

Fold in the flour. Add a teaspoon of water to form a soft, pliable dough.

Roll out to â…› inch thickness and cut into fancy shapes.

Bake in a moderate oven for 15–20 minutes. Sandwich together with lemon curd.
