Ingredients

1 large sweet potato (about 1 lb)

Grated rind of one lemon

1 egg

Milk to mix

Sugar to taste (if desired)
Methods

Wash, peel and boil the potato until soft.

Mash, add lemon rind and sugar.

Roll into a long round shape about 2 inches high.

Cut into ½ inch long pieces.

Shape well and brush with beaten egg.

Put on a greased baking sheet and bake in a moderate oven until brown.
