Ingredients

3 oz rice

1–2 tablespoons thick tomato purée

1 teaspoon ghee
-
½ cup water or stock

1 level teaspoon salt

Some vegetable or meat extract

Some pepper
-
1 fresh tomato if available
Methods

Clean and wash the rice.

Measure the water and keep all the other ingredients ready.

Heat the ghee in a saucepan.

Add the rice and stir until it looks transparent.

Add the chopped tomato, the tomato purée, water, salt and pepper and cook gently until all the water is absorbed and the rice is tender.

Pile high on a shallow dish and decorate with chopped parsley or fried onion.
